


The Sierra Mágina offers unique conditions: marked thermal amplitude between night and day, draining limestone soils, optimal sunshine between 800 and 1,200 metres. These parameters force the olive tree to concentrate its aromas and protective polyphenols.
The Picual variety develops an aromatic personality that great chefs recognise instantly: fresh grass, green tomato, persistent almond notes.
Manual net harvest in October, before full maturity. Olives at less than 30% veraison.
Olives reach the mill within 4 hours. No oxidation, cold chain preserved.
