Marco, guardian of the terroir
A former professional cyclist turned guardian of the family terroir, Marco Martos Encinas blends the spirit of a fighter with the ancestral passion for the olive trees of the Sierra Mágina. Every October morning, he reads the mountain sky: at 1,200 metres, conditions change fast, and the moment of harvest is decided on instinct alone.
When the hour is perfect, the team spreads through the groves. The harvest is done by hand, the olives still green, then cold-extracted in under three hours. This early picking sacrifices yield, but preserves an exceptional polyphenol richness and an aromatic intensity nothing can imitate.
